Our Sake
Five distinct expressions, each telling a different story of rice, water, and the quiet patience of fermentation.
Kaze
風“Mountain Wind”
Light, floral, and ethereal. Our flagship daiginjo embodies the crisp mountain air of the Sierra Nevada, where our water originates. Each sip reveals new layers — white peach gives way to jasmine, finishing with a breath of alpine freshness.
Tsuki
月“Moonlight”
Elegant and balanced, like moonlight on still water. Brewed with California-grown Calrose rice, this ginjo bridges East and West with effortless grace. A whisper of anise on the finish keeps you reaching for the next sip.
Mori
森“Forest”
Rich, earthy, and grounding. Mori is sake for contemplation — full-bodied with deep umami that pairs beautifully with hearty dishes. Close your eyes and you're walking through a Napa Valley redwood grove after rain.
Kumo
雲“Cloud”
Unfiltered, creamy, and playful. Kumo is our most approachable sake — the cloudy, silky texture delights newcomers while its complexity satisfies connoisseurs. A celebration of rice in its most expressive form.
Hi
火“Fire”
Our ever-changing seasonal release. Currently: a spring nama (unpasteurized) with bright acidity and cherry blossom aromatics. Alive, vibrant, and fleeting — like the season itself.
